If you know me, you know I love food more than most things in life. That love is probably only beat out by my love for animals, so earlier this year, I finally switched to a pescatarian diet and am happy to report that I truly absolutely love it! I won’t bore you with facts and figures on the magic of plants or animal rights or the environmental benefits – even though there is PLENTY to say – but if you’ve ever considered going veggie or are just looking for some tasty new meal ideas to try out, I’m your girl, and I’ve featured some of my favorite go-to’s below.
Breakfast
Let there be toast. While I’m a fan of toast in all forms, my latest favorite is sweet potato avocado toast – just roast up some sweet potato, smash some avocado, and top with eggs and Everything But the Bagel Seasoning (by far the most important ingredient).
When I say Smoothie, you say Bowl. Whether you’re looking for a hearty dose of protein, veggies, fruit, or any combination of the three, there’s nothing better than just throwing everything your heart desires in a blender and ending up with a tasty refreshing meal. My current favorite concoction includes: Banana, date, strawberries, almond butter, cinnamon, almond milk, yogurt and chia seeds, blended together and topped with granola, coconut flakes, (lots) of peanut butter, and banana.
Lunch
The Power of Naan. I’m going to teach you a life hack here. Tzatziki, veggies, and naan bread is the best combo out there. Chop up some peppers, carrots or cucumbers, and make your very own spread or sandwich. Pro tip – even add some hummus into the mix and get a dip duo going! Naan is so much better than pita bread, and takes any healthy veggie snack to a whole new level.
Hearty Harvest Bowl. Inspired by my favorite SweetGreen order, this bowl is easy to assemble and the perfect combination of fall-themed flavors. To create this harvest heaven, throw some brussels sprouts and sweet potato in the oven, and then combine with kale, farro, goat cheese, cranberries, walnuts, apple and balsamic dressing and you’ll be fueled for hours!
Dinner
Tofu. I used to shy away from cooking with tofu, mostly because I never had, but I am here to report that it is not only easy but also extremely good in literally anything. My favorite creation so far features carrots, farro, cucumber, edamame, spring mix and peanut sauce.
Pasta. I would never leave out pasta, my favorite food group. While I would be happy with some plain barilla and vodka sauce, my newest discovery is the Banza chickpea pasta (#protein), loaded with garlic roasted veggies, nutritional yeast, hemp seeds, and parmesan cheese.
Tacos. It doesn’t have to be Tuesday to make the most of all that tacos have to offer. Whether you’re feeling fish, cauliflower, meatless meat, or beans, tacos are the move. My personal recommendation would be to roast up some paprika-sprinkled cauliflower and toss it in a corn tortilla with refried beans, cabbage, cheese, avocado, and tomato. Top with some cilantro lime aioli and you’ve got the best taco in the business!
Eat up – the animals will thank you for it! And of course… don’t forget about dessert!☼
