Okay friends. This might not be the most innovative baking suggestion I ever make, but let me tell you, it just might be the best. More than two years after making this banana bread my absolute staple, I thought it was high time to give it a dedicated post! I’d like to personally thank my favorite YouTuber Gretchen Geraghty for originally sharing the recipe, because it single handedly got me through the pandemic and years later is still my favorite dessert to make.
Since discovering this magical mixture, I’ve shared it with friends, family, coworkers, and more, and it’s been a hit every time. It’s the best consistency and loaded with better-for-you ingredients (plus a whole lot of chocolate chips, of course), and the fact that it’s vegan AND gluten free continues to dazzle and amaze the masses. So without further ado, I’ll let this one speak for itself!
What you’ll need:
Wet Ingredients | Dry Ingredients |
3 ripe bananas 3/4 cup maple syrup 1/2 cup melted coconut oil 1 tsp vanilla | 1 cup GF flour 1 cup oats 1 tsp baking powder 1 tsp baking soda 1 tbsp cinnamon 1/2 tsp salt LOTS of chocolate chips |
What you’ll do: Mix dry ingredients and wet ingredients separately. Combine, add (a lot) of chocolate chips, and bake at 350 for 35ish minutes.
That’s really it. Ta daa – your new favorite dessert! Enjoy, and don’t forget to try it in muffin form next time. ☼
