Happy Monday friends! I’m a big fan of getting a sweet start to the week, and there’s no better way to do that than with some healthy(ish) baking. In the name of all things tasty and vegan (and gluten free, and added-sugar free), I present to you the easiest recipe you might ever bake – Five Ingredient Fudgy Brownies!
Inspired by Laura Fuentes’ 3 Ingredient Healthy Brownies, these tasty little bites are made up of peanut butter, dates, cocoa powder, almond milk, and vegan chocolate chips. That’s it! They’re bite-sized, satisfying, chocolatey deliciousness, made in five steps by following the five P’s – Preheat, Pit and Prep, Puree, and Pour. Let’s get started.
Step 1 – Preheat. Preheat the oven to 350 and grab your mini muffin pan.
Step 2 – Pit and Prep. Pit and halve 2 cups of dates, then measure out 1 cup peanut butter, ½ cup cocoa powder, and ½ cup unsweetened almond milk.
Step 3 – Puree. Toss those ingredients in the food processor and mix until creamy and smooth. You might need to add more almond milk to help get to the right consistency!
Step 4 – Pour. Add your mixture to a lightly greased muffin pan and – most importantly – top with chocolate chips.
Step 5 – Bake and Enjoy! Stick these bad boys in the oven for 18 minutes, then remove to cool.
And that’s it! You’ve got tasty, fudgy, healthy snacks for days. Pro tip: they’re best served warm, preferably with a side of vanilla ice cream. Bon Appétit! ☼
