Another day, another recipe! Today, inspired by my favorite banana bread recipe (if you know, you know), I present you with . . . mini coconut banana bites! They’re gluten free, vegan, chocolatey, and somehow both crispy and gooey – all wrapped up in one little morsel. I’m not actually vegan, but I love vegan recipes because they use whole ingredients – and let’s be real, I plan on eating 10 of these in one sitting. Whether you’re in the market for a balanced breakfast, a sweet snack, or a delicious dessert, I promise they won’t disappoint. I made them last weekend and they were the perfect addition to our movie night! So without further ado, here’s what you need to know:
What you’ll need:
- 3 ripe bananas
- ¾ cup maple syrup
- ½ cup melted coconut oil
- 1 teaspoon vanilla
- ½ cup coconut flour
- 1 cup oats
- ¼ cup coconut flakes (optional)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp cinnamon
- ½ teaspoon salt
- Vegan chocolate chips
What you’ll do:
- Mash bananas and mix with wet ingredients
- Blend dry ingredients in a separate bowl, then combine with wet ingredients
- Add (lots) of chocolate chips
- Pour mixture in mini muffin tray (optional: top with additional chocolate chips)
- Bake for 20-25 minutes
- Enjoy!
